Hearty, Rich Aromatic Pumpkin Soup Recipe by Madam Kopi Oh

You will need these ingredients to start making that delicious serving of pumpkin soup.

For the pumpkin soup:

  • 2 tablespoons of Sinolin cooking oil.
  • 2 fresh onions, chopped nicely.
  • 1 kilogram of pumpkin (the pumpkin needs to be peeled and the seeds removed. Cut the pumpkin out in chunks)
  • 700ml vegetable stock or chicken stock
  • 150ml double cream
  • Some margarine will give it a richer texture.

For the croutons:

  • A few tablespoons of pumpkin seeds.
  • 2 tablespoons of Sinolin cooking oil.
  • 4 slices of wholewheat bread. (You can use white bread, but wholewheat has a stronger taste and better texture)

Method

  • We will begin with the onions. Heat up your sauce pan or cooking pan, add in some Sinolin cooking oil and with low heat, begin stir-frying your onions gently. Cook for a few minutes. Our goal here is to soften the onions and let the aromas out. Do not overcook.
  • Add the chunks of pumpkin you have prepared and cook for 8 to 12 minutes. Stir your ingredients on the pan. In a few minutes, your pumpkin chunks will become softened and golden. This is your pumpkin soup stock.
  • Add more taste to your pumpkin with some salt and pepper. Pour the stock to a pot and heat it up. Add in some water. Let it simmer. Add in your double cream into the pot. Add some water to the stock so that it becomes overly thick.
  • Purée using a spoon. You can also use a blender. Work on it for some time to create a consistent blend.
  • Filter your soup with a fine sieve if you wish to have an even smoother texture to it.
  • The soup can now be frozen for up to 2 months.

To make the croutons:

  • The first step to making your croutons is cutting your slices of bread into small squares.
  • Heat up your cooking pan and add in some Sinolin fine grade cooking oil. Fry the bread until it becomes crispy. This will take a few minutes
  • Add in some pumpkin seeds and continue cooking the bread so they become toasty. And voila! Your croutons are now ready to be served!
  • Add the croutons and pumpkin seeds to your soup.
  • Add some green herbs on it to enrich the taste and aroma of the pumpkin soup.
