Minced Chicken Wrapped in Mango Lettuce Cups Recipe by Dapur Sinolin
Yield: 4 servings
Ingredients:
- 1 tsp of Salt
- 1 tsp of black pepper
- 500gr of chicken
- ½ cup of red onion
- ½ cup of red bell pepper
- ½ cup of green bell pepper
- 4 tbsp of Cooking Oil
- 1 ½ tbsp of soy sauce
- 2 garlic cloves
- 1 tsp of fresh ginger
- ¾ cup of chopped mango
- ¼ cup of chopped fresh cilantro leaves
- lettuce leaves, for serving
Directions:
- Heat oil in a large non-stick frying pan over medium heat. Then stir fry the minced chicken until half-cooked. Then set aside.
- In another frying pain, stir fry red onion, red & green bell pepper. Add the half-cooked chicken, soy sauce, garlic, mango, cilantro leaves, mix well. Then add salt and black pepper to taste.
- Serve the minced chicken with mango on the lettuce cups.
