Vegetable Shrimp Chayote by Dapur Sinolin

Cooking time: 30 minutes
Ingredients :
- 50 ml of Sinolin cooking oil
- 1 piece of squash
- 400 grams of shrimp
- 2 cm galangal, crushing
- 3 bay leaves
- 3 orange leaves
- 650 ml of coconut milk
- ½ tbsp of sugar
- ½ tbsp of salt
Seasoning :
- 5 onions
- 5 cloves of garlic
- ½ tsp turmeric
- 3 candlenuts
- 7 pieces of red pepper
- 5 small chilies
- 2 tsp coriander
Direction:
- Clean the shrimp from the head and the skin to leave the tail, wash clean and give lime juice to remove fishy.
- Peel the peeled skin of the skin and cut it long like a match with a thickness of 1 cm. Wash clean to remove sap.
- Heat the cooking oil and stir fry the spices, galangal, bay leaves and orange leaves until fragrant for 5 minutes. Stirring constantly so as not to burn.
- Add the shrimp, cook until the color changes. Add salt, sugar and coconut milk to simmer by stirring slowly so that the coconut milk is not broken.
- Add the cooked pumpkin until cooked for 10 minutes and get the desired level of softness. Check the taste and adjust.
- Serve with a sprinkling of fried onions.
