Skinny Thai Chicken Meatballs with Peanut Sauce by Dapur Sinolin

I have a some spare peanut butter left, so i have an idea to cook this!

ingredients :

For meatballs

  • 300 gr chicken meat
  • 10 red onions
  • 6 cloves of garlic
  • 1 stalk of celery leaves
  • 1 stalk of leeks
  • 1 teaspoon of fish sauce
  • 1 teaspoon of red curry paste
  • salt and pepper to taste
  • 1 teaspoon of white pepper
  • 1 teaspoon of chili powder
  • 1 egg
  • 1 cup of breadcrumbs

For peanut sauce

  • 1 tablespoon of sinolin cooking oil
  • 1 tablespoon of red curry paste
  • 2 tablespoons peanut butter
  • 1 teaspoon of chili powder
  • 1 teaspoon of white pepper
  • ½ teaspoon of salt
  • 1 cup of coconut milk

Directions :

  1. Preheat the oven to 375 F degrees. Brush the pan with the Sinolin cooking oil so that the surface is not sticky when baking.
  2. In a food processor, mix all the ingredients for the meatballs together . Shape the meatballs into 1 inch small balls. Place the meatballs on a baking sheet with Sinolin cooking oil and bake for about 30 minutes or until done.
  3. Meanwhile you can make a sauce. Heat oil in a medium pan. Heat Sinolin cooking oil, add red curry paste and cook for a few minutes. Add the remaining ingredients, stir and cook for 5 minutes.
  4. Add meatballs to the sauce and stir so that the meatballs are fully coated. Garnish with parsley or coriander leaves.
  5. Ready to be served
