Skinny Thai Chicken Meatballs with Peanut Sauce by Dapur Sinolin

I have a some spare peanut butter left, so i have an idea to cook this!
ingredients :
For meatballs
- 300 gr chicken meat
- 10 red onions
- 6 cloves of garlic
- 1 stalk of celery leaves
- 1 stalk of leeks
- 1 teaspoon of fish sauce
- 1 teaspoon of red curry paste
- salt and pepper to taste
- 1 teaspoon of white pepper
- 1 teaspoon of chili powder
- 1 egg
- 1 cup of breadcrumbs
For peanut sauce
- 1 tablespoon of sinolin cooking oil
- 1 tablespoon of red curry paste
- 2 tablespoons peanut butter
- 1 teaspoon of chili powder
- 1 teaspoon of white pepper
- ½ teaspoon of salt
- 1 cup of coconut milk
Directions :
- Preheat the oven to 375 F degrees. Brush the pan with the Sinolin cooking oil so that the surface is not sticky when baking.
- In a food processor, mix all the ingredients for the meatballs together . Shape the meatballs into 1 inch small balls. Place the meatballs on a baking sheet with Sinolin cooking oil and bake for about 30 minutes or until done.
- Meanwhile you can make a sauce. Heat oil in a medium pan. Heat Sinolin cooking oil, add red curry paste and cook for a few minutes. Add the remaining ingredients, stir and cook for 5 minutes.
- Add meatballs to the sauce and stir so that the meatballs are fully coated. Garnish with parsley or coriander leaves.
- Ready to be served
