Pepes Ikan Mas By Dapur Sinolin
The main ingredient :
- 2 large sized goldfish that have been cleaned
- 2 banana leaves
Ground spices
(it’s a bit rough):
- 15 curly chillies
- 8 cayenne peppers
- 8 shallots
- 3 garlic
- 2 turmeric finger segments
- 5 candlenuts
- 2 galangal finger segments
Other seasonings:
- 2 geprek lemongrass stems
- 4 bay leaves
- 4 pieces of orange leaf
- Basil enough
- Salt to taste (I mushroom broth)
How to cook :
- Saute ground spices with other herbs until fragrant
- Give salt, taste correction
- Turn off the heat, add the fish, go back and forth until the spices are fairly even.
- Arrange spices and fish on banana leaves. Add basil leaves. The spices are also put into the belly of the fish.
- Steam the fish until cooked.
- Grilled fish until fragrant before consumption.
