Soto Medan By Dapur Sinolin

Ingredients:

  • 1kg of chicken, cut into 4 parts, cover with lemon juice and salt, let stand a few minutes, rinse again.
  • 1 liter liquid coconut milk
  • 1/2 liter thick coconut milk
  • 2 cm galangal
  • 2 bay leaves
  • 2 pieces of orange leaf
  • 1 lemongrass, rubbed
  • Star anise
  • Cardamom
  • Sugar, salt to taste

Ground spices

  • 10 onions
  • 4 cloves garlic
  • 1 tbsp roasted coriander
  • 5 pieces of toasted hazelnut
  • 1 teaspoon pepper
  • Turmeric thumb
  • 1/4 teaspoon cumin
  • 2 cm ginger

Supplementary :

  • Bean sprouts, pour hot water
  • Boiled eggs
  • Tomatoes, chopped
  • Potato chips
  • Fried onion
  • Sambal rawit ijo
  • Fried chips (no 😅)
  • Celery leaves
  • Leek

Directions:

  1. Saute the seasoning that has been mashed together with lemongrass, bay leaves and orange leaves, star anise, cardamom until fragrant. Add the pieces of chicken meat stir until it changes color. Pour runny coconut milk, sugar, salt. Cook until the chicken meat becomes tender. Remove chicken meat, drain, set aside.
  2. Add thick coconut milk, stir until boiling, flavor correction, turn off the heat.
  3. Fried chicken, then shreded finely, set aside.
  4. Serve soto with shredded chicken and complementary ingredients.
