Thai Peanut Fish Curry Recipe by Madam Kopi Oh

One of the most important ingredients in this dish is the crispy fried onion. You can get this ingredient from any Asian food store in your neighbourhood. You can also make the fried onions at home too.

We will be using dried spices and tamarind to balance the creamy, nutty flavours of the curry paste. All in all, a very rich aromatic dish as you would come to expect from a Thai cuisine. By following this recipe, you should be able to serve around 5 to 6 persons.

Ingredients:

  • 50 g (1¾ oz/1/3 cup) sesame seeds
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon ground turmeric
  • 1 tablespoon of desiccated coconut
  • 2 teaspoons ground coriander
  • ½ teaspoon ground cumin
  • 40 g (1½ oz/½ cup) crisp fried onion
  • 5 cm (2 in) piece ginger, chopped
  • 2 garlic cloves, chopped
  • 3 tablespoons tamarind purée
  • 1 tablespoon crunchy peanut butter
  • 1 tablespoon roasted peanuts
  • 8 curry leaves, plus extra to serve
  • 1 kg (2 lb 4 oz) firm white fish fillets, cut into skinless 2 cm (¾ in) cubes
  • 1 tablespoon lemon juice

Steps to Preparing the Perfect Thai Peanut Fish Curry:

  1. Heat the frying pan up with medium heat. Put in the pan some sesame seeds and stir until the seeds become golden. Then you will add in the spices – cayenne pepper, turmeric, cumin, coriander, desiccated coconut. With medium heat, stir for around one to two minutes – until the spices release a slightly strong hint of aroma. Remove the spices from the frying pan and let cool.
  2. Next, get your food processor ready. Put the fried onions, ginger, tamarind, some salt, peanut butter, roasted peanuts, sesame, garlic and some hot water in the food processor. Blend the mixture until a rich, smooth texture is formed.
  3. Using a frying pan over medium heat, cook the sauce and curry leaves for a few minutes until it simmers. Keep the heat at medium level and let the mixture simmer for around 15 minutes.
  4. 15 minutes later, the sauce will have become thicker. Now’s the time to add the fish into the pan. Cover the pan, and let the fish simmer in the sauce for another five minutes.
  5. Add some lime or lemon juice depending on your preference. Season well with some salt and pepper.
  6. Decorate with some curry leaves.
  7. The dish is now ready to be served!

Spicy Hot Kimchi Fried Rice Recipe by Madam Kopi Oh

Have you been thinking of cooking up a simple and spicy meal soon? Kimchi fried rice is a great treat when you need some more spice in your life. In this article, you will learn how to cook a nice, tasty, spicy kimchi fried rice. This meal packs a punch of flavors. The best thing? You don’t need a lot of skill, time and effort to prepare it.

The key component to a delicious plate of kimchi fried rice is the kimchi. You want matured kimchi that’s flowing with kimchi juices. The juice is the secret to making a rich, aromatic kimchi fried rice. (You will want to separate the juice from the kimchi first in a bowl or any container.)

As an egg lover myself, I always try to add eggs into my meals. We will serve the kimchi fried rice with an  sunny side up. Over easy is fine too if you want your egg to be more cooked. Scramble the egg if that’s what you like. Me, personally, I just like the yolk to mix with the rice and this adds a new depth of flavor.

Ingredients:

  • 150 grams of kimchi. Remove the kimchi from package, and chop it up.
  • Squeeze some kimchi juice out. Collect 30 to 50 grams of kimchi juice if possible
  • 1 tablespoon of red chili paste
  • Some soy sauce
  • 3 tablespoons of Sinolin cooking oil
  • 500 grams of rice
  • Some finely chopped scallion
  • 2 eggs

Steps

  1. Remove your kimchi from its packaging. Your favourite brand of kimchi will do nicely. I prefer matured kimchi.
  2. Squeeze out as much kimchi juice from the kimchi as you can into a cup or bowl.
  3. Add some red chili paste and soy sauce into the kimchi juice. Stir the juice well with a spoon.
  4. Add some Sinolin cooking oil into the rice. You need the oil to moisturize the rice and prevent clumping.
  5. Add some Sinolin cooking oil into a frying pan, and set to heat to high. Once the pan has reached the optimal temperature (hot), add in your chopped kimchi. Stir fry until the kimchi becomes brown and releases a nice, fragrant aroma.
  6. Add the rice into the frying pan and stir well with a cooking spoon or spatula. Use strong heat and stir fry the rice. You will want to continue stirring the rice until it becomes brownish and less sticky.
  7. Remove the rice from the pan and serve on a plate. Add some scallions on top.
  8. The last step is to add an egg to your fried rice. Sunny-side up or scrambled is fine and totally up to your preference.

Dear all! Madam Kopi Oh is here to present to you a great simple recipe to make the best vegetarian nasi lemak. Just follow this simple step-by-step recipe to make a good plate of vegetarian nasi lemak for your whole family!

Firstly, we need to prepare the rice. A well prepared rice is a key component to a delicious plate of nasi lemak.

A. Rice Ingredients:

  • Rice 500 grams
  • Ginger 15 grams
  • Shallots 20 grams
  • Fenugreek 5 grams
  • Cinnamon 3 grams
  • Rock salt 10 grams
  • Brown sugar 15 grams
  • Water 800 grams
  • Sinolin cooking oil 30 grams

Preparing method:

We will be adding all these ingredients into the rice cooker. Put in the giner, shallots, fenugreek, cinnamon, salt and sugar as well as water into the rice cooker. Add in some cooking oil (our favourite brand is Sinolin Cooking Oil). Let the rice cooker do its job and soon, you will end up with a delicious pot of rice.

The second component to any tasty nasi lemak is the sambal paste. Just follow our simple recipe to make that spicy, tasty sambal.

B. Ingredients for Sambal Nasi Lemak Vegetarian:

  • Dried Chili 30 grams
  • Red onion 350 grams
  • Himalayan salt 5 grams
  • Sugar 15 grams
  • Soy sauce 10 grams
  • Coconut milk 40 grams
  • Sinolin Cooking oil 60 grams
  • Asam jawa 25 gram
  • Water 50 grams

How to make the Sambal Paste:

  1. Cut the dried chilli into half. Boil some water and take the pot from the heat. Put all your sliced chillis into the water for a few minutes. This will soften the texture of the chili.
  2. Remove dried chillis from water and place them in a blender. Blend the chilis to form a smooth paste.
  3. Peel red onions and chop them up.
  4. Using medium heat, add in some Sinolin cooking oil. Add in the chili paste and stir fry until the paste becomes fragrant and cooked. This will take around 5 minutes.
  5. After that add in the onions, coconut milk and water and continue stirring for another 2 minutes. Do this until all the ingredients are well combined.
  6. You have just prepared a good dish of sambal paste!

No nasi lemak is ever complete without some side dishes. Here are some side dishes that you can add:

  • Cucumber slices
  • Slices of boiled carrots
  • Baked potatoes

Serving instruction:

  • Place rice in the middle of the plate.
  • Pour some sambal paste by the side of the rice.
  • Surround the rice with your favourite side dishes.

This is how you make a tasty plate of vegetarian nasi lemak.
