1 Preheat oven to 400\u00b0F.<\/p>\n\n\n\n
2 Prep the mangos: While the oven\nis preheating, prep the mangos. Either\npeel and then cut away the mango flesh from the core seed, and then cut the\nmango into 1\/3-inch cubes, or follow the instructions here on How to Cut a\nMango. Set the cut mango aside in a medium bowl.<\/p>\n\n\n\n
3 Bake the salmon fillets: Line a\nroasting pan with aluminum foil. Spread some olive oil on top of the foil. Coat\nthe salmon fillets with olive oil and lay, skin side down, on the foil lined\nroasting pan. Sprinkle with salt. Place\nin the 400\u00b0F oven and cook for 10 minutes.<\/p>\n\n\n\n
4 Make the avocado mango salsa:\nWhile the salmon is cooking, prep the avocados. Cut the avocados in half. Remove\nthe seeds. Score the inside of the avocados with a small knife in a cross hatch\npattern. Scoop out the avocado pieces and add them to the bowl with the cut\nmango pieces. (See How to Cut and Peel and Avocado.)<\/p>\n\n\n\n
Add the minced red onion, serrano\nchile, and lime juice to the bowl. Sprinkle with a little salt. Gently fold the\ningredients together.<\/p>\n\n\n\n
