You\u2019re welcome.<\/p>\n\n\n\n<p>Ingredients<\/p>\n\n\n\n<ul><li>1 lb lean (at least 80%) ground beef<\/li><li>1tablespoon vegetable oil<\/li><li>1 cup diced yellow onion<\/li><li>1medium red bell pepper, diced<\/li><li>1cup fresh or frozen corn kernels<\/li><li>1can (10 oz) Old El Paso\u2122 enchilada sauce<\/li><li>1package (1 oz) Old El Paso\u2122 original taco seasoning mix<\/li><li>3cups cooked white rice<\/li><li>1cup shredded Mexican cheese blend (4 oz)<\/li><li>2tablespoons chopped fresh cilantro leaves<\/li><\/ul>\n\n\n\n<p>Steps<\/p>\n\n\n\n<ol type=\"1\"><li>Prevent your screen from going dark while you cook.<\/li><li>In 12-inch nonstick skillet, cook beef 6 to 8 minutes over medium-high heat, stirring frequently, until brown. Drain, and wipe out skillet.<\/li><li>Add oil to skillet, and heat over medium-high heat. Add onion, bell pepper and corn. Cook 5 to 7 minutes, stirring frequently, until vegetables are tender.<\/li><li>Stir in beef, enchilada sauce and taco seasoning mix. Heat to simmering; stir in rice.
