Recipe Coconut Fish baked in Banana Leaves By Dapur Sinolin
This is an easy and healthy fish recipe that’s also fun to make and the taste is truly gourmet.
Cooking in: 15-20 minutes
1 tablespoon Sinolin cooking oil
750g of fresh fish
1 banana leaf (or tinfoil / baking bread)
1 lemon, sliced
½ clove of garlic,
1 teaspoon of grated fresh ginger
4 Tbsp coconut milk
Some fresh coriander stems
- In a bowl, add fish and oil and then spread evenly.
- Place the fish on elongated banana leaves (alternatively use tin foil or baking paper), season with salt and pepper, place the lime slices on top of the fish along with garlic and ginger, drizzle with coconut milk and place the coriander on top.
- Fold on the side of the banana leaf on top of the fish and fold it above and below the leaves. Tie together with a rope to make a neat package. Place it on a baking sheet and put it in the oven for 15 minutes or until the fish is cooked and easily broken.
