Sweet and Sour Carp Fish Recipe by Dapur Sinolin

Ingredients:
- 500 gr Gourami fish fillets
- Sinolin cooking oil
- 2 cloves of garlic, chopped
- 1 tsp of salt
- 1 tbsp of lime juice
Ingredients for batter:
- ½ tsp of pepper powder
- 50 gr of wheat flour
- 25 g of cornstarch flour
Ingredients for sweet and Sour Sauce:
- 1 carrot, sliced
- 1 cucumber, sliced
- ½ pcs of onion, sliced
- 4 tbsp of tomato paste
- 5 tbsp of chilli paste
- 2 red chillies, sliced
- 2 green chillies, sliced
- ½ tsp of salt
- ½ tbsp of granulated sugar
- 1 leek, sliced
- 100 gr of pinapple, cubed.
- ½ tbsp of cornstarch flour, dissolved with 1 tbsp of water.
- 200 ml of water.
Prepare the batter:
Add pepper powder, wheat flour, and cornstarch flour into a bowl, mix well and set aside.
Prepare the fish:
- Marinate the fish fillets with garlic, salt and lime juice for about 15 minutes.
- Add the fish fillets into the batter, combine well.
- Heat up some Sinolin cooking oil in a frying pan, fry the batter-coated fish fillets until golden and crispy, drain and set aside.
Prepare the sweet & sour sauce:
Stir fry garlic, onion, red chillies and green chillies. Add carrots, stir fry until slightly soften. Add tomato and chilli paste. Add sugar and salt, simmer for a minute. Add the cucumber and pinapple, allow to thicken before turning off the heat.
Serve hot with rice or noodle.
