Beef Jerky with Chili Sauce By Dapur Sinolin
Ingredients
- Beef jerky
- 10 lengthwise sliced silver side beef
- 5 glasses water
Spice Paste
- ½ tsp coriander
- 1 thumb-sized piece ginger
- 3 shallots, sliced
- 1 garlic clove
- ½ tsp salt
- Pepper
Balado Chili Sauce
- Oil from frying beef jerky
- Spice Paste
- 3 red curly chilies
- 2 large red chilies
- ½ tsp salt
- Lime juice
- 5 shallots
Steps
Beef jerky
- Grind all spices finely into a paste.
- Coat sliced beef evenly with spice paste. Set aside.
- Bring water to boil. Braise beef on medium heat until color changes. Remove from heat. Tenderize beef slices on large, flat mortar by pounding with pestle.
- Fry beef in hot oil on high heat until colors changes. Remove from heat and tenderize further with mortar and pestle.
- Fry beef once more until golden brown. Remove and set aside. Let rest to release oil and cool.
Balado Chili Sauce
- Grind chilies, shallots, and salt coarsely
- Stir fry spice paste in the oil until fragrant. Remove from heat.
- Add lime juice, stir evenly.
- Pour balado chili sauce over beef jerky. Serve with warm rice.
